1 cup quinoa, rinsed

2 cups vegetable broth

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup diced tomatoes

1 ripe avocado, diced

1 red bell pepper, diced

1/2 red onion, finely chopped

2 tablespoons lime juice

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional for spice)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

1/4 cup crumbled feta cheese (optional)

Instructions
 

In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, cover, and reduce to a simmer. Cook for about 15 minutes or until the quinoa is fluffy and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    In a large mixing bowl, combine the black beans, corn, diced tomatoes, red bell pepper, red onion, lime juice, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix gently until well combined.

      Add the fluffed quinoa to the vegetable mixture and stir until everything is evenly mixed.
