4 boneless, skinless chicken breasts

1 cup dried apricots, chopped

1 cup chicken broth

1/2 cup apricot jam

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

1 teaspoon ground ginger

Salt and pepper to taste

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.

      Add the minced garlic, ground ginger, salt, and pepper, and sauté for another minute until fragrant.

        Stir in the chopped apricots, apricot jam, chicken broth, and thyme into the skillet. Bring this mixture to a gentle simmer and let it cook for about 5 minutes, allowing the flavors to meld.

          Season the chicken breasts with salt and pepper on both sides. Nestle the seasoned chicken breasts into the apricot mixture in the skillet, ensuring the sauce covers the chicken pieces.

            Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C).
