Ingredients

1 lb chicken breast, diced

1 cup coleslaw mix

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup green onions, chopped

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and pepper to taste

10-12 wonton wrappers

Oil for frying

Optional: Sriracha or sweet chili sauce for drizzling

Instructions

Prepare the Chicken Filling: In a bowl, mix diced chicken breast with soy sauce, sesame oil, garlic powder, ground ginger, salt, and pepper. Toss well to combine.

Cook the Chicken: Heat a skillet over medium-high heat. Add the seasoned chicken to the skillet and cook for about 6-8 minutes, or until the chicken is fully cooked and no longer pink in the center. Remove from heat and let it cool slightly.

Mix in the Veggies: In a large bowl, combine the cooked chicken with coleslaw mix, shredded cheese, and half the green onions. Mix gently to incorporate all the ingredients.

Prepare Wonton Wrappers: If you want crispy tacos, you can shape the wonton wrappers. Lightly grease a muffin tin. Cut each wonton wrapper into a circle (if desired, to fit the muffin tin), and mold them into a cup shape by pressing them into the tin.

Fry the Wontons: Pour oil into a deep skillet or pot to about 2 inches deep and heat to 350°F (175°C). Once hot, gently place the wonton cups into the oil and fry for about 2-3 minutes or until golden brown and crispy. Remove and place on a paper towel to drain.

Assemble the Tacos: Fill each crispy wonton cup with the chicken and coleslaw mixture. Top with remaining green onions and a drizzle of Sriracha or sweet chili sauce for extra flavor.

Serve: Arrange the assembled taco cups on a platter, and garnish with additional green onions if desired.
