8 strips of bacon, diced

2 medium apples, peeled, cored, and diced (preferably Granny Smith)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup brown sugar

1/4 cup apple cider vinegar

1/4 cup pure maple syrup

1/4 cup water

1 teaspoon smoked paprika

1 teaspoon black pepper

1/2 teaspoon salt

1 teaspoon fresh thyme leaves

Instructions
 

In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

    In the same skillet with the bacon fat, add the chopped onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the diced apples to the skillet, followed by the brown sugar, apple cider vinegar, maple syrup, and water. Stir to combine.

          Season the mixture with smoked paprika, black pepper, and salt. Bring it to a simmer over medium heat.

            Once simmering, reduce the heat to low and let it cook uncovered for about 30 minutes, stirring occasionally, until the apples are soft and the mixture thickens into a jam consistency.

              Stir the crispy bacon bits and fresh thyme leaves into the mixture, allowing them to warm through.

                Taste and adjust seasoning if necessary. Remove from heat and let it cool before transferring to sterilized jars.
