Instructions
In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and granulated sugar until combined.
In a separate bowl, mix the buttermilk, eggs, vanilla extract, and melted butter until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Gently fold in the diced apples until evenly distributed throughout the batter.
Preheat your waffle maker according to the manufacturer's instructions.
Once preheated, lightly grease the waffle maker with cooking spray or a small amount of oil. Pour a portion of the batter (about 1/4 cup) into the center of the waffle maker, making sure to not overfill. Close the lid and cook until the waffles are golden brown and crisp, roughly 3-4 minutes, depending on your waffle maker.
Carefully remove the waffle from the maker and let cool slightly on a wire rack.
While the waffle donuts are cooling, prepare the glaze by mixing powdered sugar, milk, and vanilla extract in a small bowl until smooth and pourable.
Heat vegetable oil in a deep pot to 350°F (175°C) for frying. Carefully slip each cooled waffle donut into the oil and fry for about 30 seconds on each side, until they are golden brown and crisp.
Remove the fried waffle donuts from the oil and drain on paper towels. Dip each donut into the prepared glaze while still warm, letting the excess drip off.
Place the glazed donuts back on the wire rack to allow the glaze to set.
Notes
Serve on a rustic wooden platter, drizzled with extra glaze and sprinkled with cinnamon.
