Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with cooking oil.
In a large mixing bowl, combine the Greek yogurt, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk until well combined and smooth.
Fold in the diced apple into the yogurt mixture, ensuring they're evenly distributed.
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt.
Gradually add the dry ingredient mixture to the wet ingredients, gently stirring just until combined. Be careful not to overmix. If using nuts, fold them in at this stage.
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. For an extra touch, place a thin slice of apple on top of each muffin and sprinkle a pinch of cinnamon over them.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Serve warm or at room temperature, optionally dusted with powdered sugar or cinnamon.
