2 ripe bananas, mashed

2 cups almond flour

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

Optional: 1/3 cup dark chocolate chips or walnuts

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with a little coconut oil.

    In a large mixing bowl, mash the ripe bananas until smooth. Stir in the honey (or maple syrup), melted coconut oil, eggs, and vanilla extract until well combined.

      In another bowl, whisk together the almond flour, baking soda, baking powder, salt, and cinnamon until evenly distributed.

        Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Be careful not to overmix. If using, fold in the dark chocolate chips or walnuts at this stage for added flavor and texture.

          Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

            Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
