Ingredients
  

1 cup black beans, rinsed and drained

1 cup corn, drained

1 cup bell peppers (red, yellow, and green), diced

1/2 cup red onion, finely chopped

1 cup shredded cheese (pepper jack or cheddar)

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

8 egg roll wrappers

Olive oil spray

Dipping sauce of choice (salsa, avocado crema, or ranch)

Instructions
 

In a large mixing bowl, combine black beans, corn, diced bell peppers, red onion, and shredded cheese.

    Add the cumin, chili powder, garlic powder, salt, and black pepper to the mixture. Stir until evenly combined.

      Take one egg roll wrapper and lay it on a clean surface with one corner pointing toward you. Place about 2-3 tablespoons of the filling mixture near the bottom center of the wrapper.

        Fold the bottom corner of the wrapper over the filling, tucking it in tightly. Fold in the side corners and then roll it up tightly toward the top corner. Use a little water to seal it if needed.

          Repeat the rolling process with the remaining wrappers and filling mixture.

            Preheat the air fryer to 375°F (190°C) for about 5 minutes.

              Lightly spray the egg rolls with olive oil on all sides.

                Place the egg rolls in a single layer in the air fryer basket, making sure they are not crowded. You may need to do this in batches.

                  Air fry for 10-12 minutes, flipping the egg rolls halfway through, until they are golden brown and crispy.

                    Remove from the air fryer and let cool slightly before serving.
