2 cups cooked chicken, shredded

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

1 ½ cups shredded cheese (cheddar or pepper jack)

4 large flour tortillas

½ cup sour cream or Greek yogurt (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

In a large mixing bowl, combine the shredded chicken, black beans, corn, and diced tomatoes.

    Add the chili powder, cumin, garlic powder, salt, and pepper to the mixture, stirring well to combine all ingredients evenly.

      Lay a tortilla flat on a clean surface and spoon about ½ cup of the chicken mixture into the center. Sprinkle cheese on top.

        Fold in the sides of the tortilla and then roll it tightly from the bottom to the top, sealing the filling inside. Repeat with the remaining tortillas.

          Preheat your air fryer to 400°F (200°C) for about 3 minutes.

            Lightly spray the air fryer basket with cooking oil. Place 2 or 3 burritos in the basket, seam side down, ensuring they aren’t overcrowded.

              Air fry the burritos for 10-12 minutes, or until they are golden brown and crispy, flipping them halfway through for even cooking.

                Remove from the air fryer and let them cool for a minute before slicing in half.

                  Serve the burritos with a dollop of sour cream or Greek yogurt and garnish with chopped cilantro.
