Instructions
In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
Once boiling, add the flour and baking powder all at once, stirring vigorously until a dough forms and pulls away from the sides of the pan.
Remove from heat and mix in the vanilla extract until fully incorporated. Let the dough cool for a few minutes.
Preheat the air fryer to 375°F (190°C).
Once the dough has cooled slightly, transfer it to a piping bag fitted with a large star tip.
Cut small pieces of parchment paper into squares (about 2x2 inches) or prepare a silicone baking mat.
Pipe the churro dough into bite-sized pieces (about 1 inch long) directly onto the parchment squares or silicone mat.
Lightly spray the churro bites with cooking spray to help them crisp up in the air fryer.
Place the churro bites, parchment-side down, into the air fryer basket in a single layer, making sure not to overcrowd.
Air fry for 8-10 minutes, or until they are golden brown and crisp.
While the churro bites are cooking, mix the sugar and cinnamon in a shallow bowl.
Once cooked, remove them from the air fryer and immediately toss them in the cinnamon sugar mixture until coated.
Notes
Serve warm with chocolate sauce or caramel for dipping.
