Start by preheating your air fryer to 400°F (200°C) for about 5 minutes.
In a large bowl, whisk together the flour, water (or plant-based milk), garlic powder, onion powder, smoked paprika, salt, and pepper until you have a smooth batter.
Dip each cauliflower floret into the batter, allowing any excess to drip off.
Lightly coat the air fryer basket with olive oil to prevent sticking. Place the battered cauliflower florets in a single layer in the air fryer basket. You may need to work in batches.
Air fry the cauliflower bites for 12-15 minutes, shaking the basket halfway through, until they are golden brown and crispy.
While the cauliflower is cooking, combine the cooked cauliflower bites with buffalo sauce in a large bowl. Toss until evenly coated.
Return the coated cauliflower bites to the air fryer basket and air fry for an additional 2-3 minutes until the sauce has slightly caramelized.
Remove from the air fryer and let them cool slightly before serving.
Garnish with fresh parsley for an extra pop of color.

Serve with celery sticks and ranch or blue cheese dressing for dipping.
