Roasted Red Pepper Spinach Stuffed Chicken Delight
Ingredients
- 4 pieces boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 0.5 cup roasted red peppers, chopped
- 0.5 cup cream cheese, softened
- 0.5 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- to taste salt and pepper
- 2 tablespoons olive oil
- optional fresh basil leaves for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the chopped spinach, roasted red peppers, cream cheese, mozzarella cheese, minced garlic, Italian seasoning, salt, and pepper. Mix well until all ingredients are combined into a thick filling.
- Take the chicken breasts and carefully slice a pocket into the side of each breast. Be careful not to cut all the way through.
- Stuff each chicken breast pocket with the prepared filling, using about 1/4 of the mixture for each breast. Secure the openings with toothpicks if necessary.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts, cooking for about 4-5 minutes per side, until browned.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- Remove the toothpicks before serving. Allow the chicken to rest for a few minutes.
- Slice the chicken and serve topped with fresh basil leaves if desired.
