In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well.
Gradually add warm water and olive oil to the dry ingredients. Stir until a dough begins to form.
Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 30-45 minutes, or until doubled in size.
Preheat your oven to 425°F (220°C).
Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4-inch thickness.
Using a round cutter or a glass, cut circles from the dough (about 4-5 inches in diameter).
On half of each circle, place a tablespoon of shredded mozzarella cheese, a few pieces of diced pepperoni, a sprinkle of oregano, and garlic powder.
Fold the other half of the dough circle over the filling to create a pocket, and press the edges firmly to seal. You can use a fork to crimp the edges for extra security.
Place the pizza pockets on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil.
Bake in the preheated oven for 15-20 minutes, or until golden brown.
Allow the pizza pockets to cool slightly before serving. Serve warm with marinara sauce for dipping.
