lemon juice (for a fresh twist)

Instructions
Place the chicken breasts in the bottom of the crockpot.
Pour the chicken broth and water over the chicken.
Add the diced carrots, diced celery, chopped onion, and minced garlic to the slow cooker.
Stir in the dried thyme, dried parsley, bay leaf, salt, and pepper.
Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
Once the chicken is cooked, carefully remove it from the crockpot and shred it with two forks.
Return the shredded chicken back to the crockpot.
Stir in the egg noodles and cook on high for an additional 20-30 minutes, or until the noodles are tender.
Just before serving, stir in the lemon juice to brighten the flavors.
Taste and adjust seasoning if necessary, then remove the bay leaf.
Notes
Ladle the soup into bowls and garnish with freshly chopped parsley. Serve with crusty bread on the side for a complete meal!
