Instructions
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners or lightly grease it.
In a large mixing bowl, combine the mashed bananas and melted coconut oil. Mix well until smooth.
Stir in the brown sugar until fully combined. Then add the beaten egg and vanilla extract, mixing until smooth again.
Sprinkle the baking soda and salt over the mixture and whisk in gently.
Gradually add the flour to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay!
Fold in the chocolate chips and chopped walnuts (if using) until evenly distributed throughout the batter.
Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Serve warm with a side of cream cheese or butter. Garnish with fresh banana slices and a sprinkle of chocolate chips.
