Ingredients
- 1 can (12 oz) Coca-Cola (regular or diet)
- 1 tablespoon gelatin powder
- 1/2 cup cold water
- 1 tablespoon sugar (optional, for sweetness)
- 1/2 teaspoon vanilla extract

Instructions
- In a small bowl, sprinkle the gelatin powder over 1/2 cup of cold water. Allow it to bloom for about 5 minutes until it absorbs the water and forms a gel-like consistency.
- Place the bowl over a double boiler or in a microwave for about 15-20 seconds to dissolve the gelatin. Stir until it is completely dissolved. Make sure not to boil it.
- In a large mixing bowl, pour in the Coca-Cola slowly to reduce fizzing. Then, gently mix in the dissolved gelatin and optional sugar and vanilla extract to the Coke. Stir gently to combine; avoid creating too many bubbles.
- Use a hand mixer or stand mixer to whip the Coca-Cola mixture on medium speed for about 2-3 minutes until it becomes fluffy and aerated. You should see the mixture almost double in size and become light and mousse-like.
- Once fluffy, spoon the mixture into serving cups or glasses filled with ice cubes, leaving some space at the top.
- Optionally, top with whipped cream for an indulgent treat and add a cherry or mint leaf for garnish.
