Ingredients

  • 12 oz cheese tortellini (fresh or frozen)
  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn (fresh, frozen, or canned)
  • 2 tablespoons taco seasoning
  • 1 cup chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • optional sour cream
  • optional chopped cilantro
  • optional diced avocado
  • optional sliced jalapeños

Instructions

  1. In a large pot over medium heat, add the olive oil. Once hot, add the ground beef or turkey. Cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes).
  2. Drain excess fat if necessary, and sprinkle in the taco seasoning. Stir to combine, allowing the meat to absorb the flavors for about 1-2 minutes.
  3. Add the canned diced tomatoes (with juice), black beans, corn, chicken or vegetable broth, and bring the mixture to a light simmer.
  4. Once simmering, add the tortellini to the pot. Stir gently to combine all ingredients. Cover the pot and cook according to the tortellini package instructions, typically around 3-5 minutes for fresh and 5-7 minutes for frozen, until tortellini are tender.
  5. Remove the pot from heat and stir in the shredded cheddar cheese until melted and evenly distributed. Season with salt and pepper to taste.
  6. Let the dish rest for a few minutes to thicken slightly before serving.

💡 Chef's Notes

Serve in bowls, topped with sour cream, cilantro, and avocado. Garnish with jalapeños for extra kick.
