Taco Tortellini Flavorful One-Pot Pasta Delight
Ingredients
- 12 oz cheese tortellini (fresh or frozen)
- 1 lb ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn (fresh, frozen, or canned)
- 2 tablespoons taco seasoning
- 1 cup chicken or vegetable broth
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil

- optional sliced jalapeños
Instructions
- In a large pot over medium heat, add the olive oil. Once hot, add the ground beef or turkey. Cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes).
- Drain excess fat if necessary, and sprinkle in the taco seasoning. Stir to combine, allowing the meat to absorb the flavors for about 1-2 minutes.
- Add the canned diced tomatoes (with juice), black beans, corn, chicken or vegetable broth, and bring the mixture to a light simmer.
- Once simmering, add the tortellini to the pot. Stir gently to combine all ingredients. Cover the pot and cook according to the tortellini package instructions, typically around 3-5 minutes for fresh and 5-7 minutes for frozen, until tortellini are tender.
- Remove the pot from heat and stir in the shredded cheddar cheese until melted and evenly distributed. Season with salt and pepper to taste.
- Let the dish rest for a few minutes to thicken slightly before serving.
