Ingredients

  • 1 pound carrots, peeled and cut into uniform sticks
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the olive oil, honey, ground cinnamon, cayenne pepper, garlic powder, salt, and pepper. Whisk until well blended.
  3. Add the carrot sticks to the bowl and toss them in the sweet and spicy mixture until evenly coated.
  4. Arrange the coated carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and caramelized, flipping them halfway through for even cooking.
  6. Once done, remove the carrots from the oven and let them cool slightly before transferring to a serving dish.
  7. Garnish with freshly chopped parsley before serving.

💡 Chef's Notes

Adjust the cayenne pepper to taste for desired spiciness.
