Ingredients

  • 6 slices thick brioche bread
  • 4 oz cream cheese, softened
  • 0.25 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 0.5 cup milk
  • 1 teaspoon ground cinnamon
  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons butter
  • 1 serving whipped cream (for topping)
  • 1 serving additional strawberries and mint leaves (for garnish)

Instructions

  1. In a medium bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.
  2. Take two slices of brioche bread and spread a generous layer of the cream cheese mixture on each slice. Top with sliced strawberries, then place another slice of bread on top to form a sandwich. Repeat with the remaining bread.
  3. In a separate bowl, whisk together the eggs, milk, and ground cinnamon until well combined.
  4. Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter, allowing it to melt.
  5. Dip each sandwich into the egg mixture, making sure to coat both sides thoroughly, then place in the skillet once butter is melted.
  6. Cook each side for about 3-4 minutes, or until golden brown and crispy. Add more butter to the skillet as needed for cooking additional sandwiches.
  7. Once cooked, remove from the skillet and let cool slightly before slicing in half.
  8. Serve warm with a dollop of whipped cream on top, extra sliced strawberries, and fresh mint leaves for garnish.
