Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 3 tablespoons harissa paste
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • to taste salt and pepper
  • 1 lemon juice
  • for garnish fresh cilantro or parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the drained chickpeas, harissa paste, olive oil, cumin, smoked paprika, garlic powder, and onion powder.
  3. Season the mixture with salt and pepper, then squeeze in the juice of one lemon.
  4. Toss everything together until the chickpeas are well coated in the spices and harissa.
  5. Spread the chickpeas on a baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, or until the chickpeas are crispy and golden brown, shaking the pan halfway through for even cooking.
  7. Once done, remove from the oven and let them cool for a few minutes.
  8. Serve warm, garnished with fresh cilantro or parsley for a pop of color and flavor.
