Smoked Sausage and Potato Bake Flavorful One-Pan Meal
Ingredients
- 1 pound smoked sausage, sliced
- 4 medium russet potatoes, cubed
- 1 unit red bell pepper, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme

- 1 cup shredded cheddar cheese

Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the cubed potatoes, diced red bell pepper, chopped onion, and minced garlic.
- Drizzle the olive oil over the vegetables, and sprinkle with smoked paprika, dried thyme, salt, and pepper. Toss everything evenly until the vegetables are well coated.
- In a greased baking dish, spread the coated vegetable mixture to form an even layer.
- Scatter the sliced smoked sausage evenly over the top of the vegetables.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and stir the contents to ensure even cooking.
- Return the dish to the oven and bake uncovered for an additional 20 minutes, or until the potatoes are tender and lightly golden.
- Remove the dish from the oven and sprinkle the shredded cheddar cheese over the top.
- Place the dish back into the oven for another 5 minutes, or until the cheese is melted and bubbly.
- Once done, let it cool for a few minutes, then garnish with chopped fresh parsley before serving.
