Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) crushed tomatoes
  • 1 tablespoon brown sugar
  • to taste salt and pepper
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 1 tablespoon lemon juice

Instructions

  1. In the slow cooker, add the chopped onion, minced garlic, and grated ginger. Stir well.
  2. In a large bowl, combine the chicken pieces with curry powder, garam masala, turmeric, cumin, and coriander. Mix until the chicken is fully coated with the spices.
  3. Add the seasoned chicken to the slow cooker along with the coconut milk, crushed tomatoes, brown sugar, salt, and pepper. Stir until everything is combined.
  4. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. About 15 minutes before serving, stir in the lemon juice and adjust seasoning as needed.
  6. Serve the butter chicken over steamed basmati rice or with naan bread.
