Skillet Cajun Spiced Flounder Savory Seafood Delight
Ingredients
- 4 fillets flounder
- 2 tablespoons Cajun seasoning
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon zested and juiced

- 1 cup chopped fresh parsley
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
Instructions
- Begin by patting the flounder fillets dry with a paper towel. This will help them sear nicely in the skillet.
- Sprinkle the Cajun seasoning evenly over both sides of each fillet, pressing it gently to help it adhere. Add salt and pepper to taste.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Gently place the seasoned flounder fillets into the skillet, cooking them for about 3-4 minutes on each side or until they are golden brown and cooked through. Use a spatula to carefully flip the fillets.
- In the last minute of cooking, add the halved cherry tomatoes to the skillet, tossing them around the fish to lightly roast them.
- Pour in the lemon juice and sprinkle the lemon zest over the fish and tomatoes. Add the spinach, allowing it to wilt for about 1 minute.
- Once everything is cooked, remove the skillet from heat and garnish the dish with chopped fresh parsley.

Serve the flounder on a large platter, topped with the roasted tomatoes and wilted spinach. Add a wedge of lemon on the side for an extra burst of flavor and a pop of color!
