Ingredients

  • 4 fillets flounder
  • 2 tablespoons Cajun seasoning
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon zested and juiced
  • to taste salt and pepper
  • 1 cup chopped fresh parsley
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach

Instructions

  1. Begin by patting the flounder fillets dry with a paper towel. This will help them sear nicely in the skillet.
  2. Sprinkle the Cajun seasoning evenly over both sides of each fillet, pressing it gently to help it adhere. Add salt and pepper to taste.
  3. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Gently place the seasoned flounder fillets into the skillet, cooking them for about 3-4 minutes on each side or until they are golden brown and cooked through. Use a spatula to carefully flip the fillets.
  5. In the last minute of cooking, add the halved cherry tomatoes to the skillet, tossing them around the fish to lightly roast them.
  6. Pour in the lemon juice and sprinkle the lemon zest over the fish and tomatoes. Add the spinach, allowing it to wilt for about 1 minute.
  7. Once everything is cooked, remove the skillet from heat and garnish the dish with chopped fresh parsley.

💡 Chef's Notes

Serve the flounder on a large platter, topped with the roasted tomatoes and wilted spinach. Add a wedge of lemon on the side for an extra burst of flavor and a pop of color!
