Sheet Pan BBQ Chicken Sweet Potato Fries Delight
Ingredients
- 4 pieces chicken thighs, bone-in and skin-on
- 1 cup BBQ sauce (your favorite brand or homemade)
- 2 large sweet potatoes, cut into thin fries
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder

Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, toss the chicken thighs with ½ cup of BBQ sauce, ensuring they are well-coated.
- In another bowl, combine the sweet potato fries with olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
- Line a large sheet pan with parchment paper for easy cleanup. Spread the seasoned sweet potato fries in a single layer on one side of the pan, leaving room for the chicken.
- Place the BBQ-coated chicken thighs on the other side of the sheet pan. Drizzle with an additional splash of BBQ sauce if desired.
- Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the sweet potatoes are golden and crispy.
- Remove the sheet pan from the oven and let it rest for a few minutes. Sprinkle fresh chopped parsley over the chicken and sweet potato fries for a pop of color.
- Plate individual servings of chicken and fries, and drizzle with additional BBQ sauce if desired.
