Ingredients

  • 4 pieces chicken thighs, bone-in and skin-on
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 2 large sweet potatoes, cut into thin fries
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss the chicken thighs with ½ cup of BBQ sauce, ensuring they are well-coated.
  3. In another bowl, combine the sweet potato fries with olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  4. Line a large sheet pan with parchment paper for easy cleanup. Spread the seasoned sweet potato fries in a single layer on one side of the pan, leaving room for the chicken.
  5. Place the BBQ-coated chicken thighs on the other side of the sheet pan. Drizzle with an additional splash of BBQ sauce if desired.
  6. Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the sweet potatoes are golden and crispy.
  7. Remove the sheet pan from the oven and let it rest for a few minutes. Sprinkle fresh chopped parsley over the chicken and sweet potato fries for a pop of color.
  8. Plate individual servings of chicken and fries, and drizzle with additional BBQ sauce if desired.

💡 Chef's Notes

For an attractive display, arrange the chicken thighs on a platter alongside the sweet potato fries. Add a small bowl of additional BBQ sauce for dipping and garnish with a sprinkle of parsley.
