Ingredients

  • 2 lbs pork loin
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 apples peeled and sliced (such as Granny Smith or Honeycrisp)
  • 0.5 cup pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cinnamon
  • 0 sprigs fresh rosemary (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine minced garlic, chopped rosemary, salt, pepper, and olive oil. Mix well to form a paste.
  3. Rub this aromatic paste all over the pork loin, ensuring it is evenly coated.
  4. Place the pork loin in a roasting pan and roast in the preheated oven for about 60-70 minutes, or until the internal temperature reaches 145°F (63°C). Baste the pork with the pan juices halfway through for added flavor.
  5. While the pork is roasting, prepare the apple sauce. In a medium saucepan over medium heat, combine sliced apples, maple syrup, apple cider vinegar, and cinnamon.
  6. Cook the apple mixture for about 15-20 minutes, stirring occasionally until the apples are tender and the sauce has thickened slightly.
  7. Once the pork is done cooking, remove it from the oven and allow it to rest for at least 10 minutes before slicing.
  8. Serve the sliced pork drizzled with the warm maple apple sauce on the side.
