Rosemary Roasted Pork with Maple Apple Sauce Delight
Ingredients
- 2 lbs pork loin
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 3 apples peeled and sliced (such as Granny Smith or Honeycrisp)
- 0.5 cup pure maple syrup
- 1 tablespoon apple cider vinegar
- 1 teaspoon cinnamon
- 0 sprigs fresh rosemary (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, combine minced garlic, chopped rosemary, salt, pepper, and olive oil. Mix well to form a paste.
- Rub this aromatic paste all over the pork loin, ensuring it is evenly coated.
- Place the pork loin in a roasting pan and roast in the preheated oven for about 60-70 minutes, or until the internal temperature reaches 145°F (63°C). Baste the pork with the pan juices halfway through for added flavor.
- While the pork is roasting, prepare the apple sauce. In a medium saucepan over medium heat, combine sliced apples, maple syrup, apple cider vinegar, and cinnamon.
- Cook the apple mixture for about 15-20 minutes, stirring occasionally until the apples are tender and the sauce has thickened slightly.
- Once the pork is done cooking, remove it from the oven and allow it to rest for at least 10 minutes before slicing.
- Serve the sliced pork drizzled with the warm maple apple sauce on the side.
