Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 0.25 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 15x10 inch jelly roll pan with parchment paper and grease it lightly.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large mixing bowl, beat the eggs and sugar together until the mixture is light and fluffy, about 2-3 minutes.
  4. Stir in the pumpkin puree and vanilla extract into the egg mixture until well combined.
  5. Gradually fold the dry ingredients into the pumpkin mixture until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared jelly roll pan and spread it out evenly with a spatula.
  7. Bake in the preheated oven for 13-15 minutes, or until the top springs back when touched lightly.
  8. Once baked, remove the pan from the oven and immediately invert it onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper carefully.
  9. Starting at one short end, roll the cake with the towel inside, rolling it up tightly. Allow it to cool completely in this rolled position.
  10. While the cake is cooling, prepare the cream cheese filling. In a medium bowl, beat together the softened cream cheese and butter until smooth.
  11. Gradually add the powdered sugar and vanilla extract, mixing until creamy and well combined.
  12. Once the pumpkin roll is completely cooled, unroll it carefully and spread the cream cheese filling evenly over the surface.
  13. Roll the cake back up without the towel, placing it seam-side down, then wrap it in plastic wrap and refrigerate for at least an hour to set.
  14. When ready to serve, dust with additional powdered sugar if desired, slice into pieces, and enjoy!
