Pumpkin Roll Delight Simple and Tasty Fall Treat
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda

- 0.5 teaspoon ground nutmeg

- 3 large eggs
- 1 cup granulated sugar
- 1 cup canned pumpkin puree

- 8 ounces cream cheese, softened

Instructions
- Preheat your oven to 375°F (190°C). Line a 15x10 inch jelly roll pan with parchment paper and grease it lightly.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large mixing bowl, beat the eggs and sugar together until the mixture is light and fluffy, about 2-3 minutes.
- Stir in the pumpkin puree and vanilla extract into the egg mixture until well combined.
- Gradually fold the dry ingredients into the pumpkin mixture until just combined. Be careful not to overmix.
- Pour the batter into the prepared jelly roll pan and spread it out evenly with a spatula.
- Bake in the preheated oven for 13-15 minutes, or until the top springs back when touched lightly.
- Once baked, remove the pan from the oven and immediately invert it onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper carefully.
- Starting at one short end, roll the cake with the towel inside, rolling it up tightly. Allow it to cool completely in this rolled position.
- While the cake is cooling, prepare the cream cheese filling. In a medium bowl, beat together the softened cream cheese and butter until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until creamy and well combined.
- Once the pumpkin roll is completely cooled, unroll it carefully and spread the cream cheese filling evenly over the surface.
- Roll the cake back up without the towel, placing it seam-side down, then wrap it in plastic wrap and refrigerate for at least an hour to set.
- When ready to serve, dust with additional powdered sugar if desired, slice into pieces, and enjoy!
