Pulled Pork Nachos Irresistible Party Favorite Treat
Ingredients
- 2 cups pulled pork (cooked and shredded)
- 1 bag tortilla chips (about 12 oz)
- 1 cup sharp cheddar cheese, grated
- 1 cup pepperjack cheese, grated
- 0.5 cup black beans, drained and rinsed
- 0.5 cup corn (fresh, frozen, or canned)
- 0.25 cup pickled jalapeños (or fresh, to taste)
- 1 whole avocado, diced
- 0.25 cup fresh cilantro, chopped
- 0.5 cup sour cream
- 0.25 cup barbecue sauce
- 1 teaspoon smoked paprika
- to taste salt and pepper
- as needed lime wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the pulled pork with smoked paprika, salt, and pepper. Mix well until the pork is evenly seasoned.
- On a large baking sheet, spread out the tortilla chips in an even layer.
- Scatter the seasoned pulled pork evenly over the chips.
- Evenly distribute the black beans and corn over the pulled pork.
- Generously layer the sharp cheddar and pepperjack cheese over everything.
- Sprinkle the pickled jalapeños on top to add some heat.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a couple of minutes.
- Top the nachos with diced avocado, fresh cilantro, and a drizzle of barbecue sauce.
- Serve with sour cream and lime wedges on the side for drizzling or dipping.
