Pineapple Fritters Delightfully Crispy Treats
Ingredients
- 1 cup fresh pineapple, diced
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1 4 teaspoon salt
- 1 2 teaspoon ground cinnamon
- 1 2 cup coconut milk
- 1 large egg
- 1 teaspoon vanilla extract
- as needed Oil for frying
- as desired Powdered sugar for dusting (optional)
Instructions
- In a mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon. Whisk together until blended.
- In another bowl, whisk together the coconut milk, egg, and vanilla extract until smooth.
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined.
- Fold in the diced pineapple until evenly distributed in the batter.
- In a large skillet or deep pan, heat oil over medium heat (about 350°F or 175°C).
- Once the oil is hot, drop spoonfuls of the batter into the oil, being careful not to overcrowd the pan. Fry for 2-3 minutes on each side or until golden brown and crispy.
- Using a slotted spoon, remove the fritters and transfer them to a paper towel-lined plate to drain excess oil.
- If desired, dust the hot fritters with powdered sugar before serving.
