Ingredients

  • 1 cup fresh pineapple, diced
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 4 teaspoon salt
  • 1 2 teaspoon ground cinnamon
  • 1 2 cup coconut milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • as needed Oil for frying
  • as desired Powdered sugar for dusting (optional)

Instructions

  1. In a mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon. Whisk together until blended.
  2. In another bowl, whisk together the coconut milk, egg, and vanilla extract until smooth.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  4. Fold in the diced pineapple until evenly distributed in the batter.
  5. In a large skillet or deep pan, heat oil over medium heat (about 350°F or 175°C).
  6. Once the oil is hot, drop spoonfuls of the batter into the oil, being careful not to overcrowd the pan. Fry for 2-3 minutes on each side or until golden brown and crispy.
  7. Using a slotted spoon, remove the fritters and transfer them to a paper towel-lined plate to drain excess oil.
  8. If desired, dust the hot fritters with powdered sugar before serving.

💡 Chef's Notes

Serve warm on a platter, garnished with fresh mint leaves and additional pineapple slices for a vibrant tropical touch. Drizzle with a little honey or maple syrup for extra sweetness!
