Ingredients

  • 4 slices sourdough bread
  • 1 cup fresh basil pesto
  • 4 slices mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup sundried tomatoes, chopped
  • 2 tablespoons butter
  • to taste salt and pepper

Instructions

  1. Begin by preheating a skillet over medium heat.
  2. Spread a generous layer of basil pesto on one side of each slice of sourdough bread.
  3. On the non-pesto side of two of the bread slices, layer two slices of mozzarella cheese.
  4. Sprinkle grated Parmesan cheese over the mozzarella, followed by the chopped sundried tomatoes.
  5. Season with salt and pepper to taste.
  6. Top with the remaining slices of sourdough, pesto-side up to create a sandwich.
  7. In the heated skillet, melt 1 tablespoon of butter.
  8. Carefully place the sandwiches in the skillet and cook until golden brown and the cheese begins to melt, about 3-4 minutes.
  9. Flip the sandwiches carefully, adding the remaining tablespoon of butter to the skillet, and cook for another 3-4 minutes on the other side until crispy and golden.
  10. Remove from the skillet and let them cool slightly before slicing.

Feel free to add more vegetables or different cheeses to customize your sandwich.
