Ingredients

  • 1 cup natural creamy peanut butter
  • 0.5 cup honey or maple syrup
  • 1 cup rolled oats
  • 0.5 cup ground flaxseed
  • 0.5 cup mini chocolate chips
  • 0.5 teaspoon vanilla extract
  • a pinch sea salt

Instructions

  1. In a large mixing bowl, combine the peanut butter and honey (or maple syrup). Stir until thoroughly mixed.
  2. Add in the vanilla extract and a pinch of sea salt, mixing until combined.
  3. Gradually incorporate the rolled oats and ground flaxseed, stirring until everything is well combined.
  4. Fold in the mini chocolate chips until evenly distributed throughout the mixture.
  5. Once mixed, use your hands to form small balls (about 1 inch in diameter) from the mixture.
  6. Place the energy bites on a parchment-lined baking sheet or plate.
  7. Once all the mixture is formed into bites, refrigerate for at least 30 minutes to firm up.
  8. Store the bites in an airtight container in the fridge for up to one week.
