Ingredients

  • 1 cup rolled oats
  • 0.5 cup almond butter (or any nut butter of your choice)
  • 0.25 cup honey or maple syrup
  • 0.5 cup unsweetened cocoa powder
  • 0.5 cup shredded coconut (unsweetened)
  • 0.25 cup chia seeds
  • 0.25 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 0.25 cup dark chocolate chips (optional)

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Stir until well blended.
  2. Add the cocoa powder, shredded coconut, chia seeds, sea salt, and vanilla extract. Mix until all ingredients are fully incorporated.
  3. If desired, fold in the dark chocolate chips for an extra chocolatey flavor.
  4. Using your hands, scoop out a tablespoon of mixture and roll it into a ball. Repeat this process until all the mixture is formed into balls (you should get about 12-15).
  5. Once all the balls are formed, place them on a baking sheet lined with parchment paper.
  6. Refrigerate the energy balls for at least 30 minutes to help them firm up.
  7. Enjoy immediately or store them in an airtight container in the refrigerator for up to a week.
