No Bake Chocolate Coconut Energy Balls Easy Recipe
Ingredients
- 1 cup rolled oats
- 0.5 cup almond butter (or any nut butter of your choice)
- 0.25 cup honey or maple syrup
- 0.5 cup unsweetened cocoa powder
- 0.5 cup shredded coconut (unsweetened)
- 0.25 cup chia seeds
- 0.25 teaspoon sea salt
- 1 teaspoon vanilla extract
- 0.25 cup dark chocolate chips (optional)
Instructions
- In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Stir until well blended.
- Add the cocoa powder, shredded coconut, chia seeds, sea salt, and vanilla extract. Mix until all ingredients are fully incorporated.
- If desired, fold in the dark chocolate chips for an extra chocolatey flavor.
- Using your hands, scoop out a tablespoon of mixture and roll it into a ball. Repeat this process until all the mixture is formed into balls (you should get about 12-15).
- Once all the balls are formed, place them on a baking sheet lined with parchment paper.
- Refrigerate the energy balls for at least 30 minutes to help them firm up.
- Enjoy immediately or store them in an airtight container in the refrigerator for up to a week.
