Ingredients

  • 1 cup rolled oats
  • 0.5 cup creamy peanut butter
  • 0.5 cup honey (or maple syrup for a vegan option)
  • 1 scoop vanilla protein powder
  • 0.25 cup mini chocolate chips
  • 0.25 cup M&M's (or any colorful chocolate candies)
  • 0.25 cup chopped nuts (peanuts or almonds)
  • 0.5 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. In a large mixing bowl, combine the rolled oats and vanilla protein powder. Mix well to distribute the protein powder evenly.
  2. Add the creamy peanut butter and honey (or maple syrup) to the dry ingredients. Mix with a spatula or spoon until the mixture starts to come together.
  3. Stir in the mini chocolate chips, M&M's, chopped nuts, vanilla extract, and a pinch of salt. Ensure everything is evenly incorporated into the mixture.
  4. Once combined, use your hands to take small portions of the mixture and roll them into balls about 1-inch in diameter. Place each ball on a parchment-lined baking sheet.
  5. Once all the mixture is rolled into balls, refrigerate them for at least 30 minutes to firm up.
  6. After chilling, serve immediately or store in an airtight container in the fridge for up to a week.

💡 Chef's Notes

Arrange the protein balls on a colorful plate and sprinkle a few extra M&M's and chocolate chips around for added decoration. You could also wrap them individually in clear cellophane for a fun grab-and-go snack!
