Minute Creamy Avocado Spinach Pasta Delight Recipe
Ingredients
- 8 oz pasta of your choice (spaghetti, fettuccine, or penne)
- 2 whole ripe avocados, peeled and pitted
- 2 cups fresh spinach leaves
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- 0.25 cup vegetable broth (adjust for creaminess)

Instructions
- In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining, then drain the pasta and set aside.
- In a blender or food processor, combine the ripe avocados, fresh spinach, minced garlic, olive oil, lemon juice, and vegetable broth. Blend until smooth and creamy. You can adjust the consistency by adding reserved pasta water as needed.
- In the pot used for cooking pasta, add the drained pasta back in. Pour the creamy avocado sauce over the pasta. Toss gently to coat the pasta evenly with the sauce. If the sauce is too thick, add more reserved pasta water until you reach the desired creaminess.
- Season with salt, pepper, and red pepper flakes to taste. Mix well to combine all flavors.
- Divide the creamy avocado spinach pasta into serving bowls. Garnish with grated Parmesan cheese or nutritional yeast for a delicious finishing touch.
