Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.25 cup milk
  • 0.5 cup marinara sauce (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan with cooking spray or olive oil.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, and finely chopped onion.
  3. In a separate small bowl, whisk together the egg, Worcestershire sauce, Dijon mustard, milk, oregano, black pepper, and salt until well combined.
  4. Pour the wet ingredients into the meat mixture and mix well with your hands or a spatula until everything is evenly incorporated.
  5. Transfer the mixture into the prepared loaf pan, shaping it into an even loaf.
  6. Spread the marinara sauce evenly over the top of the meatloaf for added moisture and flavor.
  7. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Once cooked, allow the meatloaf to rest for 10 minutes before slicing to ensure it holds its shape.

💡 Chef's Notes

Serve slices on garlic mashed potatoes and drizzle with additional marinara sauce. Garnish with fresh parsley.
