Ingredients

  • 4 fillets white fish (like cod or tilapia)
  • 2 tablespoons olive oil
  • 1 lemon juiced and zested
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup cherry tomatoes, halved
  • 0.5 red onion thinly sliced
  • 0.25 cup Kalamata olives, pitted and sliced
  • to taste fresh parsley, chopped (for garnish)
  • to taste salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper for easier cleanup.
  2. In a small bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, paprika, salt, and pepper. Mix well to create a marinade.
  3. Place the fish fillets in the prepared baking dish. Pour the marinade over the fish, ensuring each fillet is well coated.
  4. Scatter the cherry tomatoes, red onion, and Kalamata olives around the fish in the baking dish. Drizzle with a little extra olive oil and season the vegetables with salt and pepper.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
  6. After 15 minutes, remove the foil and bake for an additional 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Once done, remove from the oven and garnish with fresh chopped parsley before serving.

💡 Chef's Notes

Serve the fish directly in the baking dish with the roasted vegetables surrounding it. Add extra lemon slices on the side for aesthetics and a pop of color!
