Mediterranean Baked Fish Savory and Healthy Delight
Ingredients
- 4 fillets white fish (like cod or tilapia)
- 2 tablespoons olive oil
- 1 lemon juiced and zested
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 cup cherry tomatoes, halved
- 0.5 red onion thinly sliced
- 0.25 cup Kalamata olives, pitted and sliced
- to taste fresh parsley, chopped (for garnish)
- to taste salt and pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper for easier cleanup.
- In a small bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, paprika, salt, and pepper. Mix well to create a marinade.
- Place the fish fillets in the prepared baking dish. Pour the marinade over the fish, ensuring each fillet is well coated.
- Scatter the cherry tomatoes, red onion, and Kalamata olives around the fish in the baking dish. Drizzle with a little extra olive oil and season the vegetables with salt and pepper.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
- After 15 minutes, remove the foil and bake for an additional 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
- Once done, remove from the oven and garnish with fresh chopped parsley before serving.
💡 Chef's Notes
Serve the fish directly in the baking dish with the roasted vegetables surrounding it. Add extra lemon slices on the side for aesthetics and a pop of color!
