Ingredients

  • 2 medium acorn squashes, halved and seeded
  • 3 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 0.25 cup chopped pecans (optional)
  • for garnish fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut each acorn squash in half and scoop out the seeds.
  3. In a small bowl, mix the maple syrup, ground cinnamon, ground nutmeg, olive oil, salt, and pepper until well combined.
  4. Place the acorn squash halves cut-side up on a baking sheet lined with parchment paper.
  5. Brush the maple mixture evenly over the cut surfaces of the squashes.
  6. If using, sprinkle chopped pecans on top for added crunch and flavor.
  7. Roast in the preheated oven for about 30-35 minutes, or until the flesh is tender and the tops are caramelized.
  8. Remove from the oven and garnish with fresh thyme leaves if desired.
  9. Serve warm as a delicious side dish or a light main course.

💡 Chef's Notes

Optional pecans and thyme add extra flavor and garnish.
