Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped nuts (walnuts or pecans optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the maple syrup, egg, and vanilla extract to the sugar mixture and beat until well combined.
  4. In a separate bowl, whisk together the rolled oats, flour, baking soda, baking powder, salt, and ground cinnamon.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
  6. If using, fold in the chopped nuts and chocolate chips for added texture and flavor.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
