Ingredients

  • 1 lb ground beef (80% lean)
  • 0.25 cup almond flour
  • 1 large egg
  • 2 cloves garlic, minced
  • 0.25 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 4 tablespoons unsalted butter
  • to taste Fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine the ground beef, almond flour, egg, minced garlic, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until all ingredients are well incorporated.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are browned and cooked through.
  5. While the meatballs are baking, melt the butter in a large skillet over medium heat. Add minced garlic to the melted butter and sauté for about 1-2 minutes, until fragrant.
  6. Once the meatballs are done, transfer them to the skillet with the garlic butter and toss them gently to coat thoroughly.
  7. Allow them to cook in the garlic butter for an additional 2-3 minutes to soak up the flavors.
  8. Serve the meatballs hot, garnished with chopped fresh parsley.
