Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 large apple (Granny Smith or Honeycrisp), peeled, cored, and grated
  • as needed butter or oil for cooking
  • as desired maple syrup and powdered sugar for serving

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon until well combined.
  2. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  4. Fold in the grated apple until evenly distributed in the batter.
  5. Heat a non-stick skillet or griddle over medium-low heat and add a little butter or oil to coat the surface.
  6. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes carefully and cook for another 2-3 minutes until golden brown and cooked through.
  8. Transfer the pancakes to a warm plate and repeat the process with the remaining batter, adding more butter or oil to the skillet as needed.
  9. Serve your delicious apple cinnamon cloud pancakes warm, drizzled with maple syrup and a sprinkle of powdered sugar on top if desired.

💡 Chef's Notes

Stack the pancakes high on a plate, and place a few apple slices on top as a garnish. Dust lightly with powdered sugar for an elegant finish!
