Ingredients

  • 2 fillets salmon (about 6 oz each)
  • 2 tablespoons honey
  • 1 lime juiced and zested
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 cup fresh cilantro, chopped
  • 2 sheets aluminum foil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, whisk together the honey, lime juice, lime zest, olive oil, minced garlic, cumin, chili powder, salt, and pepper until well combined.
  3. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for about 15-20 minutes to absorb the flavors.
  4. Cut two large sheets of aluminum foil, enough to wrap the salmon completely. Lay a portion of chopped cilantro in the center of each sheet.
  5. Place one salmon fillet on top of the cilantro on each sheet of foil. Pour any remaining marinade over the salmon.
  6. Carefully fold the edges of the foil up and over the salmon to create a sealed packet, ensuring no leaks.
  7. Place the foil packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Remove from the oven and carefully unwrap the foil. The steam will escape, so be cautious. Serve the salmon on a plate, garnished with additional cilantro if desired.
