Ingredients

  • 2 breasts boneless, skinless chicken
  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 1 cup fresh mozzarella, sliced
  • 1 large tomato, sliced
  • 1 cup fresh basil leaves
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced

Instructions

  1. In a small bowl, whisk together olive oil, minced garlic, dried oregano, salt, and pepper. Place the chicken breasts in a ziplock bag and pour the marinade over them. Seal and massage the bag to coat evenly. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  2. Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.
  3. Remove the chicken from the marinade and discard any leftover marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Brush the chicken with balsamic glaze during the last minute of grilling for added flavor.
  4. Once the chicken is done, remove it from the grill and let it rest for 5 minutes. Top each chicken breast with slices of fresh mozzarella and tomato. Cover the grill for a minute to slightly melt the cheese.
  5. Remove the chicken from the grill and place on a serving platter. Garnish with fresh basil leaves and drizzle with any remaining balsamic glaze for a beautiful finish.
