Grilled Chicken Caprese Savory and Simple Recipe
Ingredients
- 2 breasts boneless, skinless chicken
- 2 tablespoons balsamic glaze
- 2 tablespoons olive oil

- 1 cup fresh mozzarella, sliced
- 1 large tomato, sliced
- 1 cup fresh basil leaves
- 1 teaspoon dried oregano
- 1 clove garlic, minced
Instructions
- In a small bowl, whisk together olive oil, minced garlic, dried oregano, salt, and pepper. Place the chicken breasts in a ziplock bag and pour the marinade over them. Seal and massage the bag to coat evenly. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.
- Remove the chicken from the marinade and discard any leftover marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Brush the chicken with balsamic glaze during the last minute of grilling for added flavor.
- Once the chicken is done, remove it from the grill and let it rest for 5 minutes. Top each chicken breast with slices of fresh mozzarella and tomato. Cover the grill for a minute to slightly melt the cheese.
- Remove the chicken from the grill and place on a serving platter. Garnish with fresh basil leaves and drizzle with any remaining balsamic glaze for a beautiful finish.
