Ingredients

- 1 lb chicken breast, thinly sliced

- 1 small red onion, thinly sliced

- 1 medium cucumber, shredded and drained
- 2 cloves garlic, minced
- 1 tablespoon lemon juice

Instructions
- Prepare the Chicken: In a bowl, combine sliced chicken with olive oil, smoked paprika, garlic powder, dried oregano, salt, and pepper. Mix well to coat the chicken evenly.
- Cook the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 8-10 minutes. Remove from heat and set aside.
- Make the Tzatziki: In a mixing bowl, combine Greek yogurt, shredded cucumber (after draining excess water), minced garlic, lemon juice, and salt. Stir well and add fresh dill if using. Refrigerate for at least 10 minutes to allow flavors to meld.
- Assemble the Bowl: In serving bowls, place a base of cooked quinoa and top with the sautéed chicken. Arrange cherry tomatoes, diced cucumber, sliced red onion, and mixed greens around the chicken.
- Add Toppings: Drizzle a generous amount of tzatziki over the bowl and sprinkle crumbled feta cheese if desired. Garnish with chopped fresh parsley for an extra touch of color.
