Ingredients

  • 4 slices sourdough bread
  • 4 oz goat cheese, softened
  • 0.5 cup fresh blackberries
  • 2 tablespoons honey
  • 2 tablespoons unsalted butter, softened
  • 1 pinch salt
  • 1 tablespoon fresh thyme leaves for garnish (optional)

Instructions

  1. Heat a skillet over medium heat.
  2. In a small bowl, mix the softened goat cheese with honey and a pinch of salt until well combined.
  3. Spread the goat cheese mixture on two slices of sourdough bread.
  4. Place fresh blackberries onto the goat cheese, distributing them evenly.
  5. Top with the remaining slices of bread to form two sandwiches.
  6. Spread the softened butter on the outer sides of each sandwich.
  7. Place the sandwiches in the hot skillet and cook until the bread is golden brown and crispy, about 4-5 minutes per side.
  8. Once both sides are golden, remove from the skillet and let cool for a minute.
  9. Slice the sandwiches diagonally and garnish with fresh thyme leaves if desired.
  10. Serve immediately while warm.

💡 Chef's Notes

Serve on a rustic wooden board with extra blackberries scattered around for a pop of color. Drizzle a bit of extra honey on the side for dipping.
