Ingredients

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)
  • to taste salt and pepper
  • 1 tablespoon olive oil
  • for garnish fresh parsley, chopped

Instructions

  1. Prepare the Steak: Start by patting the steak cubes dry with a paper towel. This will help achieve a better sear. Season generously with salt and pepper on all sides.
  2. Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until hot but not smoking.
  3. Cook the Steak Bites: Add the steak cubes in a single layer, making sure not to overcrowd the pan. Sear the steak bites for about 2-3 minutes on each side until they develop a nice brown crust but remain medium rare to medium inside. Remove them from the skillet and transfer to a plate.
  4. Make the Garlic Butter: In the same skillet, reduce the heat to medium and add the butter. Once it melts, add the minced garlic, thyme, and rosemary. Sauté for about 1-2 minutes, stirring constantly to prevent the garlic from burning.
  5. Combine and Serve: Return the seared steak bites back to the skillet and toss them in the garlic butter for 1-2 minutes until well coated. Remove from heat.
  6. Garnish: Serve immediately, garnished with fresh parsley for a pop of color and flavor.

For best results, use fresh herbs.
