Ingredients

  • 1 whole fresh ripe pineapple, peeled and sliced into rings

Instructions

  1. Begin by preparing the pineapple rings. After peeling and slicing the pineapple into rings, place them on a paper towel to absorb any excess moisture.
  2. In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and ground cinnamon. Mix well to ensure even distribution of dry ingredients.
  3. In a separate bowl, whisk together coconut milk and honey (or maple syrup) until well combined.
  4. Gradually pour the coconut milk mixture into the dry ingredients while whisking gently, until a smooth batter forms.
  5. Heat vegetable oil in a deep frying pan over medium heat. To test if the oil is hot enough, drop a small spoonful of batter into the oil; it should sizzle and float to the surface.
  6. Dip each pineapple ring into the batter, allowing any excess to drip off, and carefully place it in the hot oil. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
  7. Use a slotted spoon to retrieve the fried pineapple rings and place them on a plate lined with paper towels to drain excess oil.
  8. Repeat the frying process with the remaining pineapple rings.
  9. Serve the fried pineapple rings warm, garnished with fresh mint leaves for an added pop of color and freshness.
