Fried Pineapple Rings Delightful Tropical Snack Recipe
Ingredients
- 1 whole fresh ripe pineapple, peeled and sliced into rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup coconut milk
- 1 tablespoon honey or maple syrup
- as needed oil Vegetable oil, for frying
- as needed leaves Fresh mint leaves, for garnish (optional)
Instructions
- Begin by preparing the pineapple rings. After peeling and slicing the pineapple into rings, place them on a paper towel to absorb any excess moisture.
- In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and ground cinnamon. Mix well to ensure even distribution of dry ingredients.
- In a separate bowl, whisk together coconut milk and honey (or maple syrup) until well combined.
- Gradually pour the coconut milk mixture into the dry ingredients while whisking gently, until a smooth batter forms.
- Heat vegetable oil in a deep frying pan over medium heat. To test if the oil is hot enough, drop a small spoonful of batter into the oil; it should sizzle and float to the surface.
- Dip each pineapple ring into the batter, allowing any excess to drip off, and carefully place it in the hot oil. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
- Use a slotted spoon to retrieve the fried pineapple rings and place them on a plate lined with paper towels to drain excess oil.
- Repeat the frying process with the remaining pineapple rings.
- Serve the fried pineapple rings warm, garnished with fresh mint leaves for an added pop of color and freshness.
