Ingredients

  • 1 cup cottage cheese
  • 3 large eggs, separated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon baking powder
  • to taste pinch salt
  • 1 tablespoon fresh chives, chopped (optional)
  • as needed olive oil or cooking spray for greasing

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper and lightly grease it with olive oil or cooking spray.
  2. In a medium mixing bowl, combine the cottage cheese, egg yolks, garlic powder, onion powder, baking powder, and a pinch of salt. Mix well until the mixture is smooth and cohesive.
  3. In a separate clean bowl, beat the egg whites with an electric mixer on high speed until stiff peaks form (approximately 3-5 minutes). The whites should be glossy and hold their shape.
  4. Carefully fold the egg whites into the cottage cheese mixture using a spatula. Do this gently to keep the mixture airy and fluffy; do not overmix. If using, fold in the chopped chives at this stage for added flavor.
  5. Using a large spoon or ice cream scoop, create 6-8 mounds of the mixture on the prepared baking sheet, shaping them into round clouds. Make sure to leave some space between each mound as they may spread slightly while baking.
  6. Bake in the preheated oven for about 25-30 minutes or until the tops are lightly golden and the centers feel firm to the touch.
  7. Once baked, remove the cloud bread from the oven and let them cool on a wire rack for a few minutes before serving.

Serve warm on a wooden board, garnished with fresh chives or herbs.
