Fluffy Cottage Cheese Cloud Bread Light and Easy Recipe
Ingredients
- 1 cup cottage cheese
- 3 large eggs, separated
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon baking powder
- to taste pinch salt
- 1 tablespoon fresh chives, chopped (optional)

Instructions
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper and lightly grease it with olive oil or cooking spray.
- In a medium mixing bowl, combine the cottage cheese, egg yolks, garlic powder, onion powder, baking powder, and a pinch of salt. Mix well until the mixture is smooth and cohesive.
- In a separate clean bowl, beat the egg whites with an electric mixer on high speed until stiff peaks form (approximately 3-5 minutes). The whites should be glossy and hold their shape.
- Carefully fold the egg whites into the cottage cheese mixture using a spatula. Do this gently to keep the mixture airy and fluffy; do not overmix. If using, fold in the chopped chives at this stage for added flavor.
- Using a large spoon or ice cream scoop, create 6-8 mounds of the mixture on the prepared baking sheet, shaping them into round clouds. Make sure to leave some space between each mound as they may spread slightly while baking.
- Bake in the preheated oven for about 25-30 minutes or until the tops are lightly golden and the centers feel firm to the touch.
- Once baked, remove the cloud bread from the oven and let them cool on a wire rack for a few minutes before serving.
