Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon sugar
  • 1 teaspoon lemon juice
  • 2 cups vanilla ice cream
  • 1 cup strawberry soda or sparkling water
  • 0 none Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Toss gently to coat the strawberries evenly, and let them sit for about 10-15 minutes to macerate, allowing juices to develop.
  2. In a tall glass, add a scoop of vanilla ice cream to the bottom.
  3. Spoon some of the macerated strawberries over the ice cream. Be sure to include some of the juice for added flavor.
  4. Slowly pour in the strawberry soda or sparkling water, filling the glass until it's just above the ice cream layer. The fizz will create a fun float effect.
  5. Add another scoop of vanilla ice cream on top, then garnish with additional strawberry slices and a sprig of fresh mint, if desired.
  6. Serve immediately with a spoon or straw to enjoy the delicious layers!
