Ingredients

  • 1 lb ground lamb or beef
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper
  • 4 cups mashed potatoes (prepared from 2 lbs potatoes)
  • 1 cup shredded Irish cheddar cheese
  • 1 2 tablespoons milk
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the ground lamb or beef. Cook until browned, about 5-7 minutes. Drain any excess fat.
  3. Add the chopped onion, minced garlic, and diced carrots to the skillet. Cook for another 5 minutes until the vegetables are softened.
  4. Stir in the frozen peas, tomato paste, Worcestershire sauce, thyme, and rosemary. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, ensuring all ingredients are well combined.
  5. In a separate bowl, mix the prepared mashed potatoes with shredded cheese, milk, and butter until creamy. Season with salt and pepper.
  6. In a 9x13 inch baking dish, spread the meat and vegetable mixture evenly. Top it with the creamy mashed potatoes, spreading it out smoothly with a spatula.
  7. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the edges are bubbling.
  8. Remove from the oven and let it rest for a few minutes before serving.

💡 Chef's Notes

Serve warm, garnished with fresh parsley or green onions on top for a pop of color.
