Crockpot French Onion Meatloaf with Melted Swiss Cheese
Ingredients
- 1.5 pounds ground beef
- 1 cup breadcrumbs
- 1 large onion, finely sliced
- 1 cup French onion dip
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon Worcestershire sauce

- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 8 oz Swiss cheese, sliced
- to garnish Fresh parsley, chopped
Instructions
- Begin by preparing the onions. In a skillet over medium heat, add a drizzle of olive oil and sauté the sliced onions until they become soft and caramelized, about 15-20 minutes. Stir occasionally to prevent burning. Once caramelized, set aside to cool slightly.
- In a large bowl, combine the ground beef, breadcrumbs, French onion dip, minced garlic, egg, Worcestershire sauce, thyme, parsley, and the sautéed onions. Season with salt and pepper to taste. Mix until just combined, being careful not to overwork the meat.
- Shape the meat mixture into a loaf shape and place it into the bottom of your crockpot.
- Cover the meatloaf with a layer of Swiss cheese slices, allowing them to melt beautifully over the top as it cooks.
- Cook on low for 6-8 hours or high for 4-5 hours, until the meatloaf reaches an internal temperature of 160°F.
- Once cooked, carefully remove the meatloaf from the crockpot and let it rest for about 10 minutes before slicing.
- Serve warm, garnished with fresh parsley for an extra touch of color and flavor.
