Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • for garnish grated Parmesan cheese
  • for garnish fresh basil leaves

Instructions

  1. Begin by seasoning the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  2. In a large skillet over medium-high heat, add olive oil and butter. Once the butter has melted, add the chicken breasts. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in the heavy cream, stirring continuously with a wooden spoon to combine with the garlic.
  5. Add in the cherry tomatoes and fresh spinach. Cook for about 3-4 minutes until the spinach wilts and the tomatoes soften.
  6. Return the chicken breasts to the skillet, allowing them to soak in the creamy sauce for an additional 2 minutes.
  7. Adjust seasoning with more salt, pepper, or Italian seasoning as needed.
  8. Serve the chicken topped with the creamy sauce, garnished with grated Parmesan cheese and fresh basil leaves.
